Undrinkable Beer

If you calculate the selling price of cask ales by thinking you will get 72 pints from a firkin you will not be making the profit you expect. All firkins have unsalable sediment which should be taken into account when working out the selling price. The question is how mush should you allow. The breweries know how much sediment is in their product as they do not pay beer duty on it, but the information is not always passed on to the licensees. Enterprise Inns have now published a table showing the unsalable sediment in the cask ales it supplies so that licensees can use this information when calculating selling prices.
